Pizza dell’Oregon

At a loss for what to make for dinner, I went to Safeway. While roaming the aisles, I had a thought – pizza! But not that nasty frozen stuff. Ugh. I’d never made pizza before, but I figured it couldn’t be too hard.

I made some pizza dough, rolled it out in the worst looking circle that I’ve ever seen, then topped it with all kinds of fresh toppings. I used basil, portobello mushrooms, fresh mozzarella and provolone cheeses, black olives, fresh ground pepper and other spices. I forgot to add the roasted peppers and I ate the fried eggplant before I could get it on the pizza. Oops.

A half hour in the oven and the pizza started looking (and smelling) quite good.

I also made a thick, meaty calzone!
